Cooking gluten-free can be challenging.
Or so I thought.
Then Tropical Traditions sent me some organic coconut flour. (Organic = yippee!)
Coconut is a staple here in the islands, though we do not have coconut flour readily available, so I didn’t think it an option. Mostly we just use oat flour to substitute for regular flour.
I was amazed at Tropical Tradition’s recipe collection, especially for that of coconut flour which boasts more than three dozen recipes including gluten-free
